    --The sausage gravy was held at 127°F in a hot hold unit rather than 135°F or above as required. It was rapidly reheated to 165*F and placed back in the unit--and the knob was turned up. Monitor temps to ensure compliance.
  • Equipment in Good Repair & Proper Adjustment (46.671)
    --The handles are broken off on two of the microwave units. Also, both upright freezers in the kitchen have mising handles also. Repair/replace as needed.
  • Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
    --Noted the floor is in poor repair in ares of the kitchen--lifted up--missing.
  • Outer Openings Protected, Exterior Walls & Roofs Protective Barrier (46.922(e)(f))
    --The door to the outside stock building has a gap and does not protect against the entry of insects, rodents, and other animals.
