1) The exterior surface of the Lincoln oven in the Pizza Hut area is soiled. 2) The basin of the mop sink located near the customer restrooms is soiled. Maintain all non-food contact surfaces clean. Clean these areas.
- Single service items properly stored, handled, dispensed
The single-service spoons in the Pizza Hut customer eating area are not stored properly. Store all single-service utensils with the handles at first grasp. Invert these spoons so the handles are facing upwards.
- Walls, ceilings, and attached equipment, properly constructed, clean
Several walls throughout the Starbucks and Pizza Hut prep areas are soiled. Maintain all walls clean. Clean these areas.

The following non-food contact surfaces are soiled: The cabinets under the sink and to the right of the sink in Starbuck's area, the interior of the cabinets at the soda fountain area and the counter top under the slushy machines. Clean and maintain clean all non-food contact surfaces. Non-food contact surfaces of equipment shall be cleaned as often as is necessary to keep the equipment free of accumulation of dust, dirt, food particles, and other debris.

The floors are soiled at the following areas: to the left of the ice machine in the Target Cafe and under the racks in the back storage area where back stock food is kept. Clean and maintain clean floors. Floors, floor coverings, mats, and duckboard shall be maintained clean.

Discussed proper temperature control and usage of a temperature log throughout the work day. Coolers are currently not in use and adequate mechanical refrigeration is not an issue.
