- A sink with at least three compartments provided for manually washing, rinsing, and sanitizing equipment and utensils. Install a 3 compartment sink with hot and cold water to each compartment and drain boards on both sides. Hot water must be at least 120 degrees farenheit. (must be installed for the purpose of washing/rinsing/sanitizing using clorox and water @ 50-100 ppm. Handsink cannot be used to wash equipment properly. In addition, provide a handsink in the same area as the three compartment sink. A handsink must be accessible at all times. The idea is to touch clean equipment with clean hands, and the drain boards allow equipment to air dry, to prevent contamination.
