- Employee was observed performing a hand washing procedure in less than 20 seconds. Employees did not wash their hands when they moved from one duty to another. Employees did not wash hands after handling soiled equipment such as cooler door handles, slicers, stoves, grills, dishwashers, faucets.
- Foods not protected by storage in packages, covered containers, etc. observed handles of food scoops lying in dry food products, such as flour, sugar, and rice.
- Chlorine concentration for chemical sanitizer in sanitizing pails concentrations were measured exceeding 300 ppm FAC. Which are use to wipe down food prep surfaces.
- Cooking staff at both the grill and steam table did not have a thermometer to measure food temperatures. Several refrigeration units did not have a thermometer to measure temperature.
- Observed mold build up on the inside of ice machine. Observed food residue on the inside lid of the ice machine. The ice bucket was stored on the floor, instead of being hung up on it's hanging bracket.
- Observed three compartment sink not properly set up. The sanitizer sink was not set up; with active dishwashing in progress.
