Ensure tortillas are from an approved source and have proper labels with manufacturer name, address, ingredients, and weight.
- Observed packages of tortillas with mold. 3 packages of tortillas were voluntarily discarded. Ensure products are in good condition and free of mold.
- 229.164 (f) (2) (A) (i) (I) separation of raw/ RTE. Observed raw shelled eggs and raw bacon stored on top shelf above hot pockets and drinks. Ensure allr aw animal items are stored below and away from ready to eat items.
- Observed gnats near the 3 compartment sink. Ensure gnats are eliminated from establishment.
- 229.165 (f) (12) (B)integral thermomter. Walk in cooler and front refrigerator with eggs did not have a thermometer. Ensure all refrigeration units used for potentially hazardous food are equipped with thermometers.
