Use one cap of bleach to 1 gallon of water. Fill the sink to a specific level then add chlorine caps till you reach the range. Use this amount of chlorine when the sink is filled to that level.
- 229.164(f)(5) contamination from another source. Bowls were being used to dispense ceviche. There is no specific contact surface for hands on bowls leading to contamination from hand contact from the bowl to the food. Use utensils with handles to dispense bulk food to single service.
