Arrange raw animal foods in refrigeration in order of cooking temperature with the highest cooking temperature on the bottom and the lowest on the top. Observed raw intact muscle beef (145 degrees F) stored below ground beef (155 degrees F). Rearrange to place the ground meat below the intact muscle beef. This was accomplished while in the establishment.

Foods not protected by storage in packages, covered containers, etc. ALL FOOD STORED AND/OR BEING HELD IN CONTAINERS BEFORE DISTRIBUTION INTO SERVING PORTIONS MUST BE PROTECTED FROM CROSS CONTAMINATION BY STORING IN PROPER FOOD CONTAINERS WITH LIDS/COVERS. 1) Inspector encountered totada chips being stored in large containers without covers/protection and other large chip containers being stored on top of and on unprotected chips.

Single-use gloves shall be used for only one task such as working with ready-to-eat food or with raw animal food, used for no other purpose, and discarded when damaged or soiled, or when interruptions occur in the operation. Found employee changing task and then handling ready-to-eat food (cheese) without necessary 20 second handwash and glove change. This item was corrected on-site.
  • Ensure proper labeling of toxic items. Found unlabeled bottles of chemical solutions. This item was corrected on-site.
  • Ensure food contact surfaces are clean to sight and touch. Found several utensils with old food accumulation stored in bin at preparation table. This items has been corrected on-site.
