- 229.164 (o) (6) (A) PHF>135. Potentially hazardous foods(Baked chicken at 122 F, located in the Deli Hot Display case) not at 135°F or above after being cooked to proper internal temperature. PHF must be maintained at 135°F or above except for a roast which when properly reheated and/or cooked may be maintained at 130°F. NOTE: Product was removed immediately and reheated to 165 F. with in 2 hours.

- Ensure proper and adequate hand washing. Employee did not wash hands in between changing gloves. Wash the hands whenever one changes from one task to another such as immediately before engaging in food preparation, working with exposed foods, clean equipment and utensils and unwrapped single service and single use articles.
- Ensure good hygienic practices. Employee drinks should not be stored on prep tables or near single service items. Discontinue storing lunches in department coolers.
- Ensure toxic items are properly labeled, stored, and used. Store toxic chemicals away from food areas and prep tables.
