- Ensure food handlers are washing hands with hot water for at least 20 seconds, frequently, especially in between tasks (i.e. cleaning tables, serving food, preparing food, touching hair, etc), as well as each time gloves are changed.
- Certified Food Manager (CFM) should be present at establishment during all hours of operation. Ensure that all CFM certifications are registered with the city. Take CFM certificates to 1901 S. - One employee seen washing hands while inspector in establishment. Employees seen wiping hands on aprons and dusting off hands between tasks, but no employees were seen washing hands. Employee seen picking up trash and food debris and then preparing milkshake without washing hands. All employees must follow proper company handwash procedures.
- 1. Foods in refrigeration and freezer unts must remain covered to prevent cross-contamination. Sausage and beef patties in freezer unit next to grill found uncovered. Condensation had formed on top of unit and was dripping into meat products. Unit must be repaired or used so that condensation does not drip onto foods. Foods must remain covered to prevent cross-contamination. 2. Cheese in container next to fryers found to be mixed with other cheeses. Old cheese appeared to be on bottom of container and new cheese appeared to be placed on top. Cheese that has been set out for use should not be reused and new cheese for use should be placed into new container.
- 1. Freezers should be clean so that they are free of food debris. 2. Containers with meat and sausage patties in freezer appear to be refilled without cleaning between refills. Containers should be cleaned between uses. 3. Cutting boards and boards on food service line are broken and should be replaced to prevent bacterial growth in broken areas. 4. Equipment used to slice tomatoes found contaminated and unclean with dried food. All equipment must be cleaned and sanitized properly.
