- Observed food handler not wash hands prior to donning gloves. Hands must be washed properly prior to putting on gloves to avoid contamination. Food handler removed gloves, washed hands, and put on new gloves
- Obsserved food handler wash hands for less than 5 seconds prior to donning gloves. Food handler did not use proper hand washing technique. Signage is posted next to sink. •Wet your hands with clean running water and apply soap. •Rub your hands together to make a lather and scrub them well; be sure to scrub the backs of your hands, between your fingers, and under your nails. •Continue rubbing your hands for at least 20 seconds. •Rinse your hands well under running water. •Dry your hands using a clean paper towel or air dry. Food handler returned to handwash stations and washed hands using proper technique.
- HAACP log of cold hold food items such as sliced onions, sliced, cheese, etc at the sandwich cooler did not include time food items were placed in cooler. Food items were 43F degrees at time of inspection. Log did include temperature of food items when placed in cooler. Cold hold food items must be 1. held at 41F degrees or less to avoid bacterial growth AND/OR 2. held on a time basis only. food items must be logged using time removed from temperature controlled environment. food items must be consumed or discarded within 4 hours to avoid bacterial growth.

- Cooler under front sandwich preparation area is not currently working. Refrigeration unit must not be used to store potentially hazardous foods until repaired.
- Employee did not wash hands before donning gloves for working with food. Employee did not wash hands in between handling raw food and working with ready-to-eat foods. Employees must follow proper handwashing procedure in between tasks by washing with soap and hot water for 20 seconds and dry with paper towel. Two barrier system must be used when working with potetially hazardous foods and then working with ready to eat foods.
- 1. Sprayer at 2 compartment prep sink was stored touching clean wares. Sprayer should be stored hanging correctly. 2. All scoops in ready to eat foods such as cheese should be stored with handles up to prevent cross-contamination. 3. Hanging utensils above sink should be moved so that they are not sprayed when dishes are rinsed or food is being prepared. 4. Freezer unit under microwave should be cleaned.
- Install an air gap of two inches or two times the diameter of the drain line between the ice machine drain line and the sewer line.
- Spatulas should not be stored against knife board and wall. Spatulas should be properly stored.
