- Raw in shell eggs inside a walk in refrigeration unit were at a temperature of 58 degrees F. An employee indicated that these eggs were taken out of refrigeration unit two hours 7 am and place back in refrigeration unit upon inspector's arrival. Establishment may use these eggs in their baked goods provided the eggs are heated to above 165 degrees F.
- Buttermilk and cream cheese inside a walk-in refrigeration unit were at temperatures between 45-46 degrees F; employees indicated that these said items had been in unit longer than 4 hours and discarded these items.
- Observed an employee placing flour tortillas into a bag with bare hands without using at least 2 approved barriers. Prior to handling ready to eat food with bare hands employees must perform a double hand wash followed by the use of a nail brush or the application of an alcohol based hand sanitizer. Establishment must also provide signed documentation outlining this procedure, when to wash, where to wash, and the corrective actions that must be taken if ready to eat food is improperly handled. Alternatively, employees may perform a double hand wash, put on gloves, and then handle ready to eat food with gloved hands.
- The hand washing sink in the employee restroom did not have access to hot water that was at least 100 degrees F. Repairs and/or modifications must be made to this sink within 10 days so that it has access to hot water that is at least 100 degrees F.
- 229.166 (h) (1) (A)HWS not convenient. There was not a hand washing sink that conveniently located in the area where tortillas are cooked and packaged. A hand washing sink must be installed in this area within 10 days, or the door between this room and the kitchen needs to be removed, or the door between this room and kitchen needs to be changed into a swinging type door.
- 229.166 (g) (3) mop sink. The faucet of the mop sink was broken. The mop sink must be repaired or replaced within 10 days.
- 229.165 (h) (2)thermometer available. Unable to locate a functioning thermometer inside the walk-in cooler. Provide a functioning thermometer inside this refrigeration unit immediately.
