Establishment must keep log or notebook to verify effectiveness of operation or process. The establishment has a food safety log booklet to monitor and record the temperatures. In the log book, the morning shift wrote down that the walk-in cooler was reading a temperature of 60F. The night shift did not record the walk-in temperature from the day before, so knowing how long the cooler was at 60F (temperature danger zone) is in question. The walk-in cooler is currently reading 41F, but it recommended to throw all the potential hazards (meat/poultry products) food away due to the fact that no one knows how long the walk-in temperature stayed at 60F. Since there is a food safety log in book for this establishment, it is imporatant that all managers maintain the food safety log-in book on a consistant basis.
  • Ensure to have thermometers in all reach-in coolers to monitor the attainment of the food products.
