- Observed employee drinks and personal items stored above cold hold unit, on prep tables and on middle shelf in refrigerator. Ensure all personal items area stored below and away from all food and food prep areas. Drinks must also be in a cup with a lid and straw, not in bottles.
- Certified Food Manager should be present at establishment during all hours of operation. Ensure that all Certified Food Manager certifications are registered with the city. To do so, take certificates down to 1901 S. Alamo, Monday through Friday between 7:45am and 4:30pm to have certificates registered for a fee of $15.45.

- Provide use by dates on all prepared food items stored and follow use by dates labeled on foods (ie. chopped onion/bell pepper has prepared date of 9/19 and is in current use today 9/27 which exceeds time allowed- voluntarily destroyed)
- 229.168 (c) (1) toxics stored improperly--with clean dishes and with single use containers.
- All wares used in food operation must be 1. washed 2. rinsed 3. sanitized 4. dry time. At time of inspection observed employee using pre mixed sanitizer to wash pan, rinse in water then store on top of other dirty dishes.
- 229.165 (d) (1) (B)Use only food containers that are free of breaks, cracks--pepperoni container is cracked and broken/several in use lids are broken. 229.165 (n) (1) (D) (v) Discontinue using equipment that is dirty--ie. flour container has build up of old food particles/shakers in use are caked with debris, pizza pan holders/tongs and in use utencils are caked with debris. ***Wash regularly to avoid.
