- At time of inspection, employee could not present Certified Food Manager certification. Ensure that all Certified Food manager certifications are posted in establishment and that there is a Certified Food Manager present during all hours of operation. Ensure that all certification of Food Manager are registered with the city, which can be done at 1901 S. Alamo, Monday through Friday between 7:45am and 4:30pm for a fee of $15.45. Certificates can be taken to have them registered.

- 229.166 (i) (5) (A)plumbing repairs. 3 compartment sink leaking from plumbing and causing foul odor throughout establishment.Investigate and correct. Base boards/seals not secure to wall and water has accumulated and mold is forming. Areas behind base boards must be dried and cleaned throughly.
- Hot water at 3 compartment sink is 89.1 F. Temperature not at proper temperature of 110F. Hot water at handsinks not at proper temperature of 100F. Establishment must cease operations until The Health Department has inspected establishment and issue has been corrected.
- 229.164 (f) (2) (A) (iv) not covered. Pizza dough with sauce in prep area not protected from contamination such as flying insects. Dough must be protected at all times and was discarded.

- 229.165 (m) (1) (A)not clean. All prep areas are not clean to sight and touch, pizza pans not throughly cleaned. Observed pizza dough letting rise on drain board of 3 compartment sink. Clean and sanitize inside of refrigerators.
