  • DIRECTIONS FOR OBTAINING/CREATING BARE HAND DOCUMENTATION FROM TEXAS DEPARTMENT OF STATE HEALTH SERVICES IS POSTED ON WALL BUT DOCUMENTATION WAS NOT PRODUCED AT TIME OF INSPECTION. EMPLOYEE OBSERVED TOUCHING READY TO EAT FOODS SUCH AS BISCUITS WITH BARE HANDS. ENSURE DOCUMENTATION IS PROVIDED ON FUTURE INSPECTIONS OR THAT SAFEGUARDS ARE USED THAT INCLUDE BUT ARE NOT LIMITED TO GLOVES AND UTENSILS.
  • Main refridgerator found at 46 degrees F. Manager stated that it cannot stay at 41 or below with him opening and closing it all day but it is at 41 before he gets here. Temperatures match claims of manager. Ensure unit is repaired by follow up inspection.
