- Potentially Hazardous Foods must be cooled from 135°F to 70°F within 2 hours. During the time of inspection a container of chili that was prepared at approximately 10:00AM (as stated by manager) had an internal temperature of 101°F. Food was promptly and voluntarily discarded by manager. Ensure foods are prepared in smaller batches or separated into smaller containers to allow for faster cooling. Use of an ice bath can also be used as an effective method of cooling. Please refer to handouts given for additonal information.
- Potentially Hazardous Food not at required temperature in reach-in cooling unit. Observed foods at temperatures ranging from 49F-47F during time of inspection. Foods were promptly and voluntarily discarded by management. Ensure cooling unit is not in use if unable to maintain a temperature of 41F or lower.
- During the time of inspection observed a bleach spray bottle and a sanitizer bucket in the hand sink during the time of inspection. Ensure the hand sink is used for hand washing only.
- Your food establishment permit is currently expired. You have 10 days to obtain a valid permit.
- Supply the handwash station with individual disposable towels (restroom).

- Use handwashing sink for handwashing only. Employees must drink from clean closed beverage containers with clean hands and away from food prep areas.
- Hand sink must provide hot water of at least 100 degrees through the use of a mixing valve or combination faucet.
- Install an air gap of two times the diameter of the drain line between the food handling equipment (beverage machine) and the wastewater drainage line.
