INSPECTOR ENCOUNTERED SEVERAL KNIVES WITH FOOD DEBRIS, RUST, OTHER HAZARDOUS MATERIAL ON THE CUTTING SURFACES. ALL WERE REMOVED FROM SERVICE TO BE WASHED AGAIN. ALL SAID UTENSILS WERE LOCATED ON THE READY TO USE LINE.

RECOMMENDED THAT ALL INTERIOR AND EXTERIOR OF THESE SURFACES BE CLEANED ON A ROUTINE, SCHEDULED TIME FRAME.

FOOD CONTACT SURFACES OF ALL SINGLE USE/SINGLE SERVE UTENSILS AND FOOD CONTAINERS MUST BE MAINTAINED AND PRESENTED IN A MANNER THAT REDUCES EXPOSER TO ENVIRONMENTAL CONTAMINATION HAZARDS AND REDUCES EXPOSER TO CONTAMINATION BY CUSTOMERS/FOOD SERVICE EMPLOYEES. INSPECTOR FOUND THAT UNWRAPPED SINGLE USE/SINGLE SERVICE UTENSILS (FORKS, KNIVES, SPOONS) ARE BEING HELD AND DISPLAYED IN SINGLE USE PAPER FOOD BOWLS. ALLIGNMENT OF SAID UTENSILS IS HAPHAZARD AND DO NOT FOLLOW GUIDELINES. INSPECTOR FOUND THAT SEVERAL OF THESE UTENSILS HAD DRIED DEBRIS AND DUST ON FOOD/MOUTH CONTACT PARTS. UTENSILS SHOULD BE MAINTAINED IN FOOD GRADE CONTAINERS THAT ALLOW THE UTENSILS TO BE ALLIGNED IN ONE DIRECTION, WHERE ONLY THE HANDLES ARE EXPOSED AND MANIPULATED BY HANDLES.

MILDEW GROWTH WAS EVIDENT ON SOME OF THESE SURFACES. ALL WERE REMOVED AND INTRODUCED INTO A SANITATION CONTAINER. MACHINES WERE TEMPORARILY PLACED OUT OF SERVICE. INSPECTOR ADVISE KITCHEN MANAGER TO REMOVE AND WASH, RINSE, AND SANITIZE DAILY.
