  • Employees must drink from clean closed beverage containers with clean hands and away from food prep areas. Bottles are not acceptable containers.
  • Supply each handwash station with individual disposable paper towels.
  • Store toxic items away from food and other items needing protection by spacing or partitioning.
  • Clean the juice drink dispenser
  • Provide utensils with handles to dispense bulk food items

  • Separate raw animal foods during preparation, holding, and dispensing, from ready-to-eat food and cooked ready-to-eat food. Observed a case of raw turkey patties stored above cooked ready to eat food in the walk in cooler.
  • Refrigerated, ready-to-eat, PHF foods held for more then 24 hrs. Shall have a consume-by-date. The day of preparation shall be counted as day 1. If held at 41F or less food can be kept for a max of 7 days.
  • Eliminate the presence of insects by using any approved means. Observed gnats in the dish washing room. DISH WASHING ROOM FLOORS ARE HOLDING WATER AT THE ROOM PERIMETER AND IN AREAS OF THE GROUT. ELIMINATING STANDING WATER WILL HELP TO MINIMIZE THE PRESENCE OF GNATS IN THE DISH WASHING ROOM.
  • Clean the ice machine
  • Utensils (spatulas and cutting boards) must be in good repair and be smooth, easily cleanable and non-absorbent.
  • Refrigerator gaskets must be in good repair.
