  • 229.163 (n) (2) (C) contaminate surroundings. Observed food handler rinse gloves off to remove residue then food handler handled a container to move fruit to cooler, returned to work station without removing gloves and washing their hands. Food handler was instructed to remove gloves and wash hands properly then reapply new gloves.

Staff on site not aware of preparation date and all food must have expiration date of seven (7) days later if held in a refrigerator more than 24 hrs. Label all foods not easily identifiable such as crema for fruit, ect.

A Certified Food Manager must be present and available when in operation of food handling, this may require more than 1 employee with Certification.   • Turned faucet valve at mop sink however no hot water of 135 F was available.Reconnect mop sink to plumbing and clean out mop sink. Ensure all waster water is properly disposed in the mop sink.

  • EMPTY SODA CANS OBSERVED IN HANDSINK. DO NOT USE HANDSINK TO DUMP LIQUID WASTE, USE THE DESIGNATED THE MOP SINK FOR PROPER WASTE DISPOSAL.
  • WHEN WASHING DISHES USE PROPER SOLUTION OF CHEMICALS AT ALL TIMES. OBSERVED FOOD HANDLER WASH A PLASTIC TRAY WITH SOLUTION MIX OF WATER, SOAP AND CHLORINE.
