- Ensure food contact surfaces of equipment and utensils are cleaned, sanitized, and in good repair. Ensure containers used to store baking ingredients are cleaned and all debris and food accumulation is removed. Ensure racks where pastries are stored are cleaned. Ensure pans in warewashing area are re-washed thoroughly to remove all food accumulation.
