- 229.164 (o) (6) (A) PHF>135. Various cooked potentially hazardous food items in a warming cabinet were between 126-129 degrees F. The manager on duty did not know how long these items had been in the unit and voluntarily discarded these items. Potentially hazardous food must be held below 41 degrees F or above 135 degrees F unless the food is being cooked, cooled, used immediately in prep, or when time only is being used as a public health control.
- Bags of raw in shell eggs were being stored inside ice that is used as food. Discontinue this practice and do not use any of this ice as food.
- 229.166 (c) (3) hot water sufficient. None of the sinks in the store had access to hot water. Employees and customers are not permitted to engage in any sort of open food handling until all sinks have access to adequate hot water. The only food that maybe sold and/or served is food that is pre-packaged at another approved food establishment. Once the sinks in the store have access to adequate hot water, 100 degrees F at the hand washing sink and 110 degrees F at the 3 compartment ware washing sink, a representative must contract inspector. If store employees or customers are found engaging in any sort of open food handling a citation will be issued to the owner and/or operator of this store.
- 229.166 (h) (1) (A)HWS not convenient. The ware washing area and the room where the ice maker is located lacked convenient access to a hand washing sink. A hand washing sink with access to hot and cold running water from a mixing type faucet must be installed in both areas, or the doors to both of these rooms can be removed, or the doors to both of these rooms can be made into swinging type doors, or these doors can be kept propped open during business hours.
- 229.165 (m) (1) (A)not clean. The interior of the ice maker was not clean to sight and touch. Clean and sanitize this food contact surface immediately
