  • Remove the door between open food handling and the hand sink that supports this food operation. Options: place door on a swing hinge so that no hand are needed to move thru the door. THis is the 4th marked violation for this. Propping the door open is not an acceptable option at this set up.
  • Milk reach in cooler has rust and damaged gaskets that pose an contamination risk
  • Must post the most recent scored inspection report- posted report was from 2013

  • Install an air gap of two times the diameter of the drain line between the food handling equipment and the sewer line between ice machine and floor drain
  • Move thermometer in milk reach in cooler to be accessible during work hours- currently this cooler was stocked full unable to read temperature

  • Reach in cooler for milk has standing water in it. Do not store milk in water- use a milk crate to lift out of water until cooler can be serviced so that no water collects at bottom.

  • Remove the door between serving area and hand sink or place a hand sink in the serving area. No barriers may be between serving operations and designated hand sink.
  • An accurate thermometer for measuring temperatures of PHF (prepared and RTE) must be on site. Thermometer in reach in reads 20 degrees F- inaccurate and the other thermometer is for cooking - has a low end of 120 degrees F not suitable for testing and logging cold hold items such as salad/milk/cut fruit.
  • All PHF must be held at 41 degrees F or below. All food recv'd by transport is at 55 degrees F with no temperature log in use. Pineapple, salad and shredded cheese at 55 degrees F.
  • At least 1 certified food manager must be on duty with City of San Antonio issued ID. Once the course is successfully completed take the certificate to DBSC located at 1901 S Alamo to purchase CIty ID cost of $15.45.
