Item found in the hot hold unit not at 135 degrees Fahrenheit or better. Onwer determined the unit was not set for the proper level. Turned up the unit and rapid reheated the item to 165 F.
- 229.164 (f) (2) (A) (i) (I) separation of raw/ RTE. Raw Potentially Hazardous Foods must be stored to prevent contamination by seperating, or placing under ready-to-eat foods. Observed raw shelled eggs stored over ready-to-eat food. Brought to the attention of the owner. Trained responsible individual and moves eggs to an area seperated from the ready-to-eat.
- 229.165 (k) (14) (A)chlorine solution. Chlorine solution must be used based on temperature andd pH concentration of the solution. The wash machine was not providing any chlorine to the solution. Investigation revieled the chlorine feed container to be empty. The container was replaced and the washer primed. The machine was then providing 100 ppm chlorine.

- 229.165 (k) (14) (A)chlorine solution. Dishwashing machines must dispense chlorine solution between 50 to 150 ppm for sanitizing. The dishwashing machine was not dispensing chlorine at those levels. Primed the machine and it was providing chlorine. Ensure dishwashing machine operator knows to prime the machine before washing dishware.

Observed sausage and guacamole thawed in the same container. Use seperate containers unless the items will be combined and cooked in the a product.
- 229.164 (o) (7) (A) consume by date (prepared). Date labeled items must be discarded after 7 days in refrigeration with day 1 being the date of preparation. Item found in the walk in refrigerator date labeled the 4th of March. This should have been discarded on the 10th. Management stated someone must have used a container which had an old date label on it. Ensure new labels are placed on items when placed in cold hold.

- 229.163 (g) Wash before RTE. Went from handling raw beet to tortillas without a hand wash. Employees must follow proper handwashing procedure after handling raw animal product washing with soap and hot water for 20 seconds and dry with paper towel before handling ready-to-eat.
- 229.164 (o) (7) (A) consume by date (prepared).Potentially Hazardous Foods packaged at a food processing plant and open for consumption in an establishment shall have a dating method indicating the date when opened if held over 24 hours. Deli meat in the establishment was not labeled with the date opened. The original manufacture date and packaging was not retained for recall purposes. Date deli meats when open and discard after 7 days or a timeframe determined by product type and evidence it is good for the time frame used.
