229.168 (c) (1) toxics stored. Observed sanitizer bucket stored on shelf next to salad croutons and other food items. Ensure all toxic items are stored to prevent contamination of food, equipment, utensils, linens, and single-service and single-use articles by separating the poisonous or toxic materials by spacing or partitioning.
229.165 (r) (1) Immersion time. Observed employee improperly sanitize tongs in 3 compartment sink. All food-contact surfaces and utensils must be immerse in a sanitizing solution for a minimum of 30 seconds and let air dry before using.
