  • Roaches observed in manufacturing area along right side of wall in manufacturing equipment and other food contact equipment, restrooms, and three compartment sink area.
  • Ensure all food contact surfaces and equipment are properly cleaned and sanitized. (Food contact equipment and surfaces in back frying area found to have dust and food debris.)
  • Ensure all food contact equipment is in good repair. (Multiple containers used to store & transport tortillas found to be broken/cracked. Replace any containers not in good repair.)
  • Provide all hand sinks with soap and towels. (Hand sink next to three compartment sink did not have soap or towels.)
  • Employees on service line observed with jewlery on hands in direct contact with raw food items.
  • Employees observed not washing their hands and exposed portions of the arms before and between tasks.
  • Food packaged in a food establishment is not properly labeled. (Lables for food available for retail sale not labeled with phone number.)
  • Provide all sinks with hot and cold running water under pressure. (Hand sink next to three compartment sink did not have hot water at time of inspection.)
  • No documentation is maintained at the food establishment that food employees contacting ready-to-eat foods with bare hands utilize two or more of the following control measures to provide additional safeguards to hazards associated with bare hand contact using double hand washing.
  • Hand washing sinks must be accessible for all food service employees in each food preparation area, food dispensing area, ware washing area, and toilet rooms. (Hand sink blocked with containers used for corn transportation and processing.)
  • Ensure all toxic items are properly labeled with the contents. (Spray bottles with contents observed without labeling.)
  • Ensure all food contact equipment is in good repair. (Large containers used for corn transportation and processesing found to have rusted metal & metal that is seperated from containers.)

ONCE THEY REACH 70F, THEY CAN BE PLACED IN REFRIGERATION TO CONTINUE TO COOLD TO 41F OR BELOW WITHIN THE NEXT FOUR HOURS.

  • FOOD EMPLOYEE OBSERVED WASHING HANDS IN 3 COMPARTMENT SINK; HANDWASHING SHOULD ONLY BE DONE IN A DESIGNATED HANDWASHING SINK AT ALL TIMES; EMPLOYEE DID NOT FULLY ENGAGE IN A PROPER HANDWASH(JUST RINSED HANDS OFF UNDER THE WATER).
  • PLEASE PROVIDE CHALUPA SHELLS, FLOUR TORTILLAS, AND BANUELOS TO BE PROPERLY LABELED WITH COMMON NAME AND LIST OF INGREDIENTS IF MORE THAN 3 INGREDIENTS IN THE PRODUCT.
