  • Salsa in containers should not be stored in standing water. At time of inspection, ice had melted completely and salsa containers (for tacos) were floating in water. Observed soda dispensing machine to be dirty near nozzles. Ensure to clean all surfaces to prevent cross contamination of drinks customers serve.

  • Equipment used for direct food contact must be cleaned at least every 4 hours i.e. Ice machine has mold build up inside. Ensure to thoroughly clean surfaces to remove mold build up.

  • Taquitos were at 90F degrees at time of inspection. All potentially hazardous foods must be kept at 135F degrees or above to prevent bacterial growth. Taquitos must be discarded after 4 hours.
  • Taquito/hot dog warmer is missing the protective covering. Covering needs to be replaced to prevent contamination to the food in the unit and to help keep the heat in for proper holding temperature.

  • 229.167 (p) (5) use of wrong sinks.Food employee washed hands in a 3-comp sink, food prep sink or mop sink. Hands must be washed in designated handsink.
  • Canned chilli had dents on them. Gerber baby food and jams were observed on the shelf with and expired expiration date.
  • Raw animal food stored with raw ready-to-eat food. Observed frozen raw pork chop on top of frozen tamales inside a deep freezer. Separate raw animal ingredients unless combining ingredients during storage, preparation, holding, and display by the following methods: Using separate containers for each type; arranging each type so that cross contamination is prevented; and preparing each type at different times or separate locations.
  • Establishment must have written procedures for monitoring critical control points. For example, a log where the write down when the food was made along with the temperature of the food and also log when the food is taken out. Establishment must routinely monitor critical control points. Refrigerated, ready-to-eat food not properly marked with a use by date. Cooked foods were observed in the refridgerator with out consumed by dates, all potentially hazardous prepared foods must be marked with a date of when the food was made and a date showing when the food needs to be consumed.
  • Hand wash sink was not in use and did not have hot and cold water flowing to it. Employee stated that the sink was broken and indicated he was going to fix it.
  • Equipment used in storing food not cleaned. Observed Deep freezer with food debris and dried-frozen beverage liquid at the bottom of the fridge. Also, dirty plastic tongs were sitting out on top of pickle jar. Observed flout tortillas inside a dirty styrofoam cooler with a white towel covering the tortillas.
  • Manager does not have proof of food manager. He stated that the food manager document is with the lady who normally works the food area.
