- Box of moldy lemons and limes observed in walk-in cooler. Manager voluntarily threw away products and they were supposed to have been thrown out yesterday. Ensure produce is discarded if mold is found in any of it. Corrected on site.
- Employee observed using pair of gloves for multiple tasks and then grabbing ice from ice machine with gloves to use for mixing in coffee pot. Ensure scoop is used when handling ice. Also ensure gloves are changed and hands are washed if any food handling will occur after other tasks (ice is considered food).
- Drain flies observed all over restaurant, especially in back area with floor drains, mop sink, and mops. Ensure as much fluid is squeezed out of mops as possible before hanging to dry. Continue cleaning in and around all drains (sink, floor, and beverage station trays) and keep areas around drains clean.
- Numerous soiled containers observed stored with clean dishes. Ensure all food debris is cleaned out of containers during washing, rinsing, and sanitizing dishes.
