  • Observed personal drink placed on food prep table in kitchen. Ensure all personal drinks are kept in a designated area; separate from all food prep and working areas. Drinks are to be stored in a cup with a lid and straw at all times.
  • Observed several containers of food in refrigerator without a use by date marked. Ensure all ready to eat food stored longer than 24 hours has a use by date marked. Use by date mark not to exceed 7 days from preparation date.
  • At time of inspection, establishment did not have chlorine strips. Ensure chlorine strips are available at all times in order to check chlorine concentration for sanitizing solution and sanitizing compartment sink.

  • Sanitizing solution in waitress area includes soap. Ensure sanitizing solution is only chlorine/water. Chlorine concentration must be 50-100ppm.
  • Observed food residue on bottom shelf of reach in cooler next to grill. Gasket of reach in cooler doors is detached. Ensure gasket is replaced so that it is not loose. Ensure all food contact surfaces are maintained clean to sight and touch at all times.
