- Observed 2 baby roaches crawling on floor. Manager states they are currently treated by ORKIN daily for roaches since it is an ongoing issue. Continue to keep all product stored properly; do not leave food out at the end of the day. Ensure all food contact surfaces are well sanitized. Eliminate any dead roaches.
- Ware washing must be done in wash, rinse, sanitze order. Sink 1, wash (soap/water), sink 2, rinse (water), and sanitize, (bleach 50-100 ppm/water).
- Thermometer used for cooler is incorrect (oven thermometer). Ensure appropriate thermometer is used.
