In small reach in cooler located across from grill/stove food items are not covered and are stacked inside of each other not prevently the possibility of cross contamination. Uncovered bin of salt and other covered containers of spices are kept on rolling rack that was placed directly beside main handwash sink for kitchen and directly beneath paper towels. Kitchen employee moved upon discovery.

  • Follow proper shelving of foods to prevent cross contamination. Observed raw eggs and chicken stored above cooked foods in the reach in and walk in coolers. From the top to the bottom shelf, foods must be stored in the following order: vegetables and cooked foods, raw seafood, raw beef, raw pork, raw poultry (eggs, chicken, etc.).
  • All potentially hazardous foods stored in coolers must be properly date-marked.
  • Observed employee manually warewashing food containers but not sanitizing in 50-100 ppm sanitizing solution.

Food was great, until i found a hair cooked into my flour tortilla. The server was nice about it and took care of my meal.
