All mechanical ware washing machine temperature(s) not at 180°F(presently 145 F). For sanitation a combination of PH concentration and temperature are not adequate. Keep quat ammonia sanitizing solution within (200ppm-400ppm). Temperature PH and chemical sanitizer combination in manual and mechanical ware washing machine must be balanced.
