  • Monitor use by dates. Do not serve for consumption potentially hazardous foods that are past the use by date. Condemned a tub of expired, unopened cooked Bowtie pasta.
  • 229.164 (f) (2) (A) (ii) (II) meat arrangement. Store raw eggs on shelf under cooked/ready-to-eat foods.

  • Store raw eggs under all types of food to prevent cross contamination. Observed a tray of raw eggs stored above foods on sandwich cooler.
  • 229.164 (o) (7) (A) consume by date (prepared). 229.164 (o) (7) (C) lunch meat - deli. Refrigerated, ready-to-eat, PHF foods held for more then 24 hrs shall have a consume-by-date. The day of preparation shall be counted as day 1. If held at 41F or less food can be kept for a max of 7 days at 45F a max of 4 days.
  • 229.163 (n) (1) eat.drink.smoke. Employees must not eat, chew, drink from an open cup and use tobacco while in the food service line. Observed employee drink from an opne cup near warewash area.
  • 229.166 (i) (1) (B) HWS improper use. Handsinks must be used for handwashing only. Observed a walnut in handsink by dry storage room.
  • 229.168 (a) toxics not labeled. Label spray bottles with common name of toxic material.

  • 229.165 (d) (1) (B)free of breaks, cracks(serving utensils,etc.). Damaged plastic ice cream scoop, meat slicer. Discard and or replace unsafe damaged equipment/utensils. Remove mold from inside ice machine(remove all ice, clean/sanitize once per month).
  • 229.168 (a) toxics not labeled. Label sanitizer container with common name of toxic material."Sanitizing Solution
  • Food contaminated by food employees(serving spoons handles inside egg and tuna salad containers), consumers or other persons through contact with their hands or other means shall be discarded. NOTE: Items discarded.
  • Potentially Hazardous food(cheese and cut produce at 50 F) not at required temperature in cooling unit. FHF must be maintained at or below 41°. Items discarded.
  • 229.165 (k) (14) (C) quat solution(manual warewash at less than 150 PPM, assure water temperature doesnt exeed 70 F). All mechanical ware washing machine temperature(s) not at 180°F(presently 145 F). For sanitation a combination of PH concentration and temperature are not adequate. Keep quat ammonia sanitizing solution within (200ppm-400ppm). Temperature PH and chemical sanitizer combination in manual and mechanical ware washing machine must be balanced.
