A warewashing sink used to wash wiping cloths, wash produce, or thaw food must be cleaned and sanitized before and after each use.
Measured quat-type sanitizer above 400 ppm, use test papers to monitor levels of sanitizer at facility.

Observed several containers of shortening with 1.5 grams of trans fat on shelving in back food storage room,discontinue using this in restaurant food.
