-Observed several dirty wiping cloths on counter tops. Ensure all dirty cloths are placed in sanitizer bucket after use at all times. -Observed sanitizer level for quat below 100ppm. Use test strips to properly measure sanitizer levels between 200ppm-300ppm for quat.

Observed no food handler cards for employees working at time of inspection. Ensure that employee information is on specified store where they work. If they work more than 1 store, additional cards can be obtained at our Office for an additional fee. ORIGINAL CARDS SHALL BE MAINTAINED IN STORE.

Observed sanitizer not being dispensed and employee using wiping cloth with 0 ppm of ammonia in bucket. Ensure that sanitizer concentration remains at 200 ppm. Correct automatic dispenser to properly dispense adequate concentration. Corrected by Manager.

An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be available to the food handler. A thermometer +/- 2 F shall be provided for each hot and cold holding unit of potentially hazardous foods and high temperature warewashing machines. (114157, 114159)
Observed inaccurate thermometer for walk-in refrigerator. Provide thermometer inside unit to adequately monitor food temperatures.

Spoke to owner on the phone. He stated that he had employees' food handler cards with him and he'd fax copies of the card to Health Dept. office. Business card (with written fax number was given to employee). Only 2 cards posted on wall (Esther and Lupe). You must fax the cards for the rest of the employees (5 cards).
