ITEM #7: Observed no paper towels at handwash station in front deli area and in rear deli areas. Soap, paper towels and warm water shall be provided at all handwash stations to facilitate proper employee hygiene practices.
ITEM #13: Observed cooked chicken in walk-in-box unit being covered with paper towels. Towels were used to indicate date marking. Food shall be covered in a way to protect from potential contamination.
ITEM #14: Observed slicer units in deli area with old and encrusted food debris. Food contact surfaces shall be clean and sanitized before or after use, every 4 hours if in continuous use, to prevent cross-contamination issues.
ITEM #14: Observed 3-bay dish sink in produce area soiled with food remains. 3-bay dish sinks shall be cleaned and sanitized after each use to prevent cross-contamination issues.
ITEM #27: Observed fan guards in butcher area with significant dust accumulation abiove preparation tables for meat. Fan guards need to be clean and maintained to prevent potential cross-contamination issues.
ITEM #32: Observed several flies in produce area of warehouse.
ITEM #44: Observed multiple non-food contact surfaces soiled. Fan guards in walk-in-box meat cooler, plastic wrap machine in produce and deli areas, inside deli display case holding cold cuts, and grease trap under 3-bay sinks in rear deli area. Equipment shall be maintained and in good repair to prevent contamination and / or pest attraction.
ITEM #46: Observed open floor drain, no cover, with significant accumulation in walk-in-box unit.
ITEM #49: Observed floor under baking equipment soiled. Observed floor in deli walk-in-box unit soiled and with chips / cracks. Floors shall be maintained and in good repair to properly clean and sanitize floor surface.
ITEM #50: Observed light not functioning in deli walk-in-box unit. Lights out and / or very dim in reach-in-freezer units where ice cream products are stored.
ITEM #51: Observed dirty mop water stored in bucket in warehouse area. Mop buckets shall be removed of soiled mop water to prevent pest attraction.
ITEM #51: Observed area in warehouse very cluttered and not passable. Items cluttered with equipment, dollies, milk crates and tables. This may be considered a fire hazard if not addressed.
