Violation descriptions and comments

ITEM #1: Based on critical violations observed at this inspection, Person-in-charge (PIC) not able to demonstrate food borne illness risk factor control measures.
ITEM #7: Observed no soap in dispenser at handwash station in prep area. Handwash stations shall be provided with soap, paper towels and warm water to facilitate proper employee hygiene practices.
ITEM #14: Observed slicer unit with old, encrusted food accumulation. Utensil holder for knives observed soiled. Food contact surfaces shall be clean and sanitized before use or every 4 hours if in continuous use to prevent cross-contamination issues.
ITEM #17: Observed potentially hazardous food items, sliced tomatoes, deli meats and sliced cheeses, maintaining poor cold holding temperatures, product temperature measured between 46-55 F, in prep table refrigeration unit.
ITEM #27: Observed dust accumualtion on fan guards over stored food product in walk-in-box unit. Food product shall be protected and stored off floor to prevent potential contamination issues.
ITEM #30: Observed wet / soiled wiping cloths stored on food prep contact surfaces in deli area. Wiping cloths shall be stored in sanitizer solution buckets to prevent potential cross-contamination issues.
ITEM #32: Observed front door of establishment open with no screen door provided to prevent insect and / or vermin entry. Doors shall be provided with screens or closed when not in use to minimize pest entry.
ITEM #40: Observed gaskets on all refrigeration units worn and soiled. Some gaskets noted with black like mold buildup and in disrepair.
ITEM #44: Observed significant grease buildup inside of fryer units. Observed significant dust and food / grease buildup under grill unit. Equipment shall be clean and maintained to prevent potential pest harborage locations.
ITEM #51: Observed clutter under staircase unit in basement. Equipment not in use or not working shall be removed from establishment. Other items need to be provided with shelving or stored in a way to prevent pest harborage.

NOTE: The following items were observed out-of-compliance during re-inspection.
