ITEM #14: Observed cutting knives and utensil holder with accumulation. Food contact surfaces shall be clean and sanitized before and after each use to prevent cross-contamination issues.
ITEM #17: Observed potentially hazardous food items maintaining poor cold holding temperatures, items between 48-60 F, in small refrigerator unit behind counter. PHF items in cold holding, shall be maintained at or below 41 F.
ITEM #27: Observed food items uncovered near handwash sink behind counter. Food items shall be covered and protected from potential contamination issues.
ITEM #30: Observed wet / soiled wiping cloth stored on food prep surface. Wiping cloths shall be stored in sanitizer solution buckets to prevent cross-contamination issues.
ITEM #40: Observed gasket / door in disrepair on deli case refrigerator unit behind counter. Needs to be repaired or replaced as food product temperatures unit may be compromised.
