Observed debris accumulation on the window sills above the ice machine. Observed debris accumulation on the ceilings and vents in the kitchen area as discussed with manager during this inspection. Clean and ensure routine cleaning.

Observed a container of sausage in the refrigerator labeled with today's date and a time of 7:00 AM. When I took the temperature at 11:20 AM, the sausage was at 83 F. Per the manager, the sausage actually went into the fridge at 9:00 AM. I explained the importance of accurate labeling and explained to the manager that the food still has 2 hours to be cooled to 70 F. The sausage was voluntarily discarded of at the time of this inspection.
I reviewed the cooling logs at facility. The cooling documentation showed that many items were not being cooled properly. There were no corrective actions documented. Per the kitchen manager, cool down charts were reviewed each morning and any foods from the day before that were not properly cooled down were discarded. I explained to the manager the proper cool down parameters and discussed documenting any corrective actions. Please send 30 days of cool down logs to this department by 7/15/15.
Observed one container of deli ham labeled 5/30. Observed one container of 12 hot dogs labeled 5/25. These items must be used or discarded within 7 days of opening. These items were voluntarily discarded by staff at time of inspection.
Observed walls throughout kitchen that were chipping and peeling. Per the kitchen manager, the walls will be repaired soon. Walls must be smooth, durable, and easily cleanable.
