- Found ribs and pork in the North walk in cooler that were only labeled with the date at below 41F. The times for onset of cool down were on their cool down charts. Corrected--times were written on labels by manager.
- The grill prep cooler was not working properly. Foods (guacamole, sour cream, blue cheese, sliced grape tomatoes, cole slaw, pork, grilled chicken, sauces) were at 48-63F in this unit. Manager voluntarily discarded them. Staff stated that this unit was just repaired yesterday. Repairman will be back tomorrow, per manager. Do not use this unit to store potentially hazardous foods until repaired. The top of the unit was filled with ice to be utlized until repaired. Do not store food in the bottom of this unit or overnight. Contact Kim at TCHD when repaired for a re-inspection.
- Found cooked and cooled beef broth that was unlabeled in the north walk in cooler. It was discarded by manager.
- Found corn and bean salsa (prepared by facility) labeled 1/3 in the South walk in cooler. This was past its 7 day use and was discarded by manager.
- Observed employees not wearing effective hair restraints. Provide hats, hairnets, or other hair coverings.
- Repaint or replace rusty wire shelves in the
- Paint or seal bare wood shelf under the bar water heater, concrete blocks under the ice machine, rusty grease trap in the kitchen, and bare wood block under the 3-compartment sink in the kitchen.
- There was 0 ppm chlorine sanitizer at the kitchen 3-compartment sink. Maintain at 50-100 ppm. Corrected to 50 ppm.
- The following areas had a build up of debris: wine cooler at the bar, waitstaff dressing cooler, soda guns/holsters. Wash, rinse, and sanitize these areas.
- The following areas had a build up of debris: cooler doors and handles, walk in door, cooler door seals, microwave exterior. Wash, rinse, and sanitize these areas.
- No hot water at West restrooms. Provide hot water to all hand sinks.
- Repair damaged walls in the utility room (holes and water damage), under 3-compartment sink in kitchen, damaged caulk around mop sink, and duct-taped trim on cook line wall. Cover exposed electrical wires in the utility room.
- Found unlabeled bottle of blue chemical under 3-compartment sink at the bar. Label all chemicals. Corrected--labeled Windex.
