- Upon entering kitchen, the cook was not wearing a hair restraint. I explained about always wearing hair restraints in the kitchen. Cook put hat on.
- The dish machine was reading at 0ppm. Owner checked with their strips and it read 0 as well. Owner called EcoLab at time of inspection. Until machine is pulling sanitizer in, use the 3-compartment sink to wash, rinse, and sanitize food surfaces. Contact me when the machine has been serviced.
- Observed food debris in both microwaves. Wash, rinse, and sanitize on a daily basis and maintain.
- Observed white build up on the edges of the ice drip tray. Wash, rinse, and sanitize on a routine basis and maintain.
- All non-food contact surfaces need to be washed, rinsed, and sanitized on a routine basis. These surfaces include but are not limited to handles, sides of equipment, seals, and cabinets.
- Observed build up on floors especially around equipment. Clean the floors.
- Observed holes in walls throughout. Observed peeling paint throughout. Seal all holes and repaint walls.

- Found containers of cut tomatoes in the reach in cooler in the kitchen area with no label of preparation or throw out date. Always label tomatoes and other foods that are prepared with a throw out or preparation date to stay in compliance with the 7 day rule.
- Racks in the cooler behind the bar are rusting. Repaint or replace racks.
- All food contact surfaces need to be washed, rinsed, and sanitized on a routine basis. These surfaces include but are not limited to the ice machine drip tray and the cutting board.
- All food contact surfaces used for cooking need to be washed, rinsed, and sanitized daily. These surfaces include but are not limited to the inside of the microwave, the kitchen grill, and the pizza oven tray.
- All non-food contact surfaces need to be washed, rinsed, and sanitized on a routine basis. These surfaces include but are not limited to handles, cooler door seals, and shelves.
- The pipes under the handsink drips. Fix the pipes.
- Cracked floor in the walk in cooler behind bar. Repair the floor.
- Build up on floors especially around and under equipment. Clean the floors.
- There is a hole in the wall near the floor by the ice machine. The wall is not an outside wall. Repair the hole.
- Observed build up on the walls throughout kitchen/prep area. Clean the walls.
- Observed dust build up on the air vent in the kitchen above the dish machine. Clean the air vent.
