  • Observed potatoes in the freezer not covered. All foods, even during cool down, must be covered to protect against contamination. Owner covered during inspection.
  • Observed chlorine concentration in sanitizer bucket in back kitchen to be 50 ppm. Chlorine concentration in sanitizer buckets must be at least twice the strength of that in a 3 compartment sink (100-200 ppm). Per employee, the shift before them was supposed to changed both sanitizer buckets during inspection. Per employee, the shift before them was supposed to change the bucket. To avoid confusion and the potential for the next shift to use a low sanitizer solution on surfaces, create a policy that requires a specific time for changing sanitizer buckets.

  • Observed steak in hotel pans in freezer that was uncovered. Food in storage must be covered to prevent contamination. Employee covered all uncovered items at time of inspection.
  • Observed cutting boards to have deep abrasions. Once cutting boards become extensively damaged it effects cleanability. Repair or replace to allow for proper cleaning.
  • Observed a wash rag in the hand washing sink. Employee removed wash rag from sink to wash hands and placed wash rag back into sink. Hand washing sinks are only to be used for hand washing and must be accessible at all times.
  • At time of inspection, no FSSMC manager was present. Per manager, the certified individual called in sick this morning and another employee was called in to work. All Category I facilities must have a certified individual on staff at all times.

  • Found marinara sauce in hot holding well at 80F and meat sauce at 100F. Maintain foods in hot holding at 135F or above. The facility was just preparing food for the day at the time of inspection. These sauces were immediately pulled and reheated to 165F in about 15 minutes. Refrain from reheating in hot holding units.

Recieved 100 on last inspection plus they have award wining pizza. Same original recipes since 1976. A Pekin and Peoria original. One of a kind potato salad and Italian Steak n Cheese. Awesome facebook contests. Great daily specials. Check them out on instagram and twitter. Yelp and Restaurant.com featured restaurant. Like them on facebook for instant saving and to download a menu. Veteran owned and operated. Military, Senior, and Student Discounts. Supporters of community youth sports and local charities. Amazing Bacon Cheese fries. Bucketlist must do :) Recieved 100 on last inspection plus they have award wining pizza. Same original recipes since 1976. A Pekin and Peoria original.
