  • Observed rusting green shelves holding single service articles. Paint or replace to allow for proper cleaning.
  • Observed hand sink in dish room without paper towels, hand sink in back without soap, and hand sink in gaming waitress area without soap. Hand sinks must always be supplied with hand soap and paper towels. Manager/employees provided all necessary items during inspection.
  • Observed broken floor tile entering closet in bar, cracked floor tile in kitchen. Repair floors to allow for proper cleaning.
  • Observed water damage to ceiling in waitress service area with black growth. Clean and sanitize the ceiling.

  • Observed unlabeled individually portioned containers of salsa, cream cheese, sour cream in the Glass door cooler in the kitchen. These food must be labeled and used within 7 days. Corrected--The above foods were discarded.
  • The inside of the keg cooler ad a build up of debris. Clean and sanitize it.
  • The top of the stove and the drip trays had a build up of debris. Clean and sanitize these areas.
  • The kitchen hand sink and door track to the glass-door cooler in the kitchen had a build up of debris. Clean and sanitize these areas.
  • There was no paper towels at the hand sink in the dish room. Provide paper towels.
  • The toilet in the employee rest room was dirty. Clean it.
  • Repair the hole in the floor tile leading to the bar closet.
  • Repair the hole in the furnace room wall.
  • Clean the build up off the wall behind the 3-compartment sink in the kitchen.
  • Provide light shields on the bulbs in the kitchen.
  • Observed an unlabeled spray bottle of a green cleaning chemical in the waitstaff area. Label all chemicals to avoid miss use. Corrected--it was discarded.
  • No FSSMC certificates were available on site. There must be a FSSMC certified food manager at this facility.
  • No food handlers certificates or food handlers were on site. All employees who handle food or food contact surfaces must attend this training within 30 days of the date of hire. This must be completed by 1/22/16.

  • Replace the missing floor tiles in the soda storage rooms.
  • The walls with the holes in the soda storage area and the storage room right inside the front door still need repaired.
  • There was no FSSMC certified food manager on site during the inspection. As a Category 1 facility, a FSSMC certified food manager must be on site during all hours of operation.

  • Observed employees not wearing effective hair restraints. Employees must wear hats, hairnets, or other hair coverings.
  • The outside of the grease trap was rusty. Paint it so it is easily cleanable.
  • The chemical sanitizing dish machine had no chlorine sanitizer. The unit was not dispensing sanitizer. Sanitize your dishes in the 3-compartment sink until repaired. Corrected--Dish sink was set up at 50 ppm chlorine. Dish machine line was primed and now was at 50 ppm chlorine.
  • The Red Bull cooler at the bar had a build up of debris inside it. Clean and sanitize it.
  • The microwave in the kitchen had a build up of debris. Clean and sanitize it.
  • Found single cups and lids stored on the floor in the back office/storage room.
  • There was no backflow prevention devise on hose hooked to mop sink faucet that was sitting in the bottom of the mop sink. COrrected--Hose was detached.
  • The paper towels were empty at the hand sink next to the kitchen 3-compartment sink. Provide paper towels at all hand sinks. There was no soap at the hand washing station outside. Corrected--soap was provided.
  • There was missing floor tiles under the dish machine, and in the soda service area. Replace missing floor tiles. The floor in the soda storage room attached to the bar was unfinished concrete. Paint or seal the floor.
  • The floor in the kitchen had a build up of debris under and around equipment and in dish room. Clean the floors.
  • There was a section of paneling missing from the storage room wall immediately inside of the main door with exposed insulation. There was an area of exposed plumbing in a hole in the wall in the soda service area and a hole in the wall in the chemical storage area in the kitchen. There was an area above the pass thru window in the kitchen where metal framing was detaching. Repair all these areas. Cover all holes in walls.
  • There was a missing light shield in the soda service area. Replace it.
  • There was a spray can of Hot Shot insecticide stored with the chemicals near the mop sink. Chemicals and pesticides must be stored separately and away from food and food contact surfaces. Corrected--pesticide was moved to separate location.
  • No FSSMC certified food manager was on site during the inspection. As a Category 1 facility, a FSSMC certified food manager must be on site during all hours of operation.
  • No temperature documentation was being completed. Document hot and col holding temperatures and submit to TCHD, Attn: Kim by 9/11/15.

  • Found cooked and cooled ribs and a 4
  • Found cooked potato skins in the prep cooler at 52F. Maintain cold foods at 41F or below. Per manager, they were thawed from frozen. The were voluntarily discarded.
  • Found cooked green beans in the walk in cooler, unlabeled. Cooked and cooled food must be labeled with both the date and time of onset of cool down. They were discarded.
  • Found a box of raw eggs on the floor of the walk in cooler. Corrected--they were put on a shelf.
  • Found no chlorine sanitizer in dish machine. Maintain at 50-100 ppm. Inspector discovered that the detergent and sanitizer lines were going into the opposite buckets (sanitizer was coming out in wash cycle and detergent was coming out in the rinse cycle. Corrected- the lines were cleaned out and switched.
  • Found sanitizer rags on the floor under the hand sink in the bar area. Store in sanitizer between uses.
  • The Southern Pride smoker and the hot holding cabinet in the kitchen had a build up debris inside them. Clean and sanitize them.
  • The white chest freezer had a build up of debris inside it. Clean and sanitize it.
  • There was no back flow prevention devise and a
  • There was some base coving behind the ice machine that was hanging loose. Reattach it to the wall.
  • No temperature charting was available. Start recording cool down, final cooking temperatures, and hot and cold holding and submit a copy of 2 weeks worth to TCHD, Attn: Kim.
  • During today's inspection it was noted that your facility is in violation of the food handlers requirement (750.570). This requirement is to be corrected by your next routine inspection. All documentation was not available yet.
