Refrigeration display case unit at food preparation area holding food at improper temperatures
Internal food temperatures were noted between 43-49 degrees
All potentially hazardous food was removed and relocated to walk-in refrigerator where temperatures were noted at 41 degrees
Repair/replace refrigeration unit with properly operating equipment
Maintain temperature throughout the unit at or below 41 degrees
Cannot use this unit until authorized by health inspector
Once repaired or replaced, contact health inspector for authorization
Noted several food contact surface areas in great need of cleaning and sanitizing
Soda nozzles with excessive accumulation of mildew
Remove nozzles daily and keep inside sanitizer solution overnight
Cutting board noted with heavy dark stain
Replace
Observed dead roaches at shelvings below soda dispensing units
Clean and sanitize shelvings to remove dead roaches to prevent attraction of vermin
