Kitchen employee was not using warewashing sink properly
Inspector questioned on how to properly wash and sanitize pots and utensils and she did not mention sanitizing (also observed that she did not sanitize a pot)
All food employees shall have adequate knowledge about food safety, according to their duties
Food safety certified individual must properly train/exchange food safety information to food employees
Observed a pot not properly sanitized during warewashing
All food contact surfaces (i.e
utensils, pots, cooling trays, etc.) must be washed, rinsed and sanitized (100ppm chlorine for 30 seconds) then air dried
Oysters observed to lack tags or labels
According to owner this is the first ordered batch
Original containers and tags must be kept onsite
Keep tags/labels at least 90 days from date of harvest
