  • Food brought out from walk-in holding at 41 degrees after 8 a.m
  • Check temperatures at 10 a.m
  • Containers set on ice
  • Only small for lunch time and rush hour food must be held in walk-in the remainder of the time
  • Provide sanitizing solution of 100ppm to sanitize contact surfaces
  • Corrected on site
  • Provide consumer advisory for \"ceviche\" cooked with lemon juice not under heat
  • Observed many flies in facility
  • Observed doors open
