- Observed lack of food safety knowledge regarding proper thawing techniques, proper holding temperatures for food and storage/designation of food equipment
- All food employees should have adequate knowledge of and be properly trained in food safety as it relates to their assigned duties
- Observed cook coughing and with a runny nose
- Employees experiencing sneezing, coughing or a runny nose should not work with exposed food, clean equipment, utensils or linens
- Employees who are sick with a communicable disease should not come to work
- Observed half-eaten candy cane in food preparation area and cinnamon tea inside a pot on the drainboard of the preparation sink, alongside a thawing chicken
- No employee should eat, drink or smoke in any work area
- Create a designated storage area away from food preparation, food storage and clean utensils, to store employee drinks and food, to prevent food contamination
- Observed cook wipe her nose with her hand and continue food preparation without washing her hands
- Employees should wash hands after touching bare human body parts other than clean hands and clean exposed portions of arms
- Observed hand-wash sink obstructed by boxes
- Employee stated they wash their hands in restroom instead
- A hand-wash facility shall be clean, unobstructed and accessible for employee use at all times
- Do not store items or obstruct hand-wash station
- Observed cooked pork stored at room temperature in blue Tupperware, measured 57 degrees
- Pork was out for 30-60 minutes
- Also observed tamales, hot chocolate and tamale prepared maza stored at room temperature
- Pork was stored in refrigerator and other food items were tossed
- Potentially hazardous foods shall be held at or below 41 degrees, or at or above 135 degrees if hot holding.
