- The following violations remain open: Bare wood is not an approved equipment surface, wood pallets inside walk-in have absorbed food debris over time
- Future plans should assess replacement with approved pallets
- Display case units continue to have duck tape in an effort to repair damaged door
- Evaluate to determine if repairs are feasible, if not replacement will be necessary
- Originally addressed on 4-17-2007 inspection
- Repair, replace drain system for hand-washing sinks
- Observed mold embedded on concrete walls inside deli walk-in
- Did not observe mold flaking from walls at this time
- If overall condition worsens, entire unit will need to be disinfected and sealed

- If shelving cannot be maintained, then replacement is necessary (no bare wood or contact paper allowed)

- Noted improper holding temperatures for potentially hazardous foods - second deli display case: cheese at 47 degrees, sausage links at 44 degrees; three-door refrigeration unit: milk, cheese and eggs at 48 degrees
- All refrigeration units must maintain food temperatures at or below 41 degrees at all times
- Contact maintenance service company to repair or replace the units
- Monitor food temperatures, temporarily remove potentially hazardous foods from these units to a properly operating refrigerator
- Clean, sanitize and maintain the outer food storage containers to remove food debris; can opener, cutting boards and other equipment used for food preparation.
