Observed meat department display refrigerator holding sausage at 48 degrees, cheese at 46 degrees, pork meat at 50 degrees, chicken thighs at 50 degrees and chicken fajitas at 50 degrees
Pork meat, chicken thighs and fajitas voluntarily destroyed by throwing it away into trash due to meats possibly being out of temperature since yesterday
Owner/manager moved thermostat and unit is now holding temperatures at 37 degrees
All other food items were just placed into unit and will cool down below 41 degrees
Observed chicharron and tripe being held at 120 degrees at steam table
Must keep food at or above 135 degrees when hot holding.
