Employees lacking in food safety handling knowledge
All employees must have adequate knowledge of and be trained in food safety as it relates to their assigned duty
Observed employee coughing and not washing hands as she continued with food handling
Hand washing must be conducted regularly; before beginning to work; before handling food/equipment/utensils, as often as necessary, when switching from working with raw to ready to eat foods, after touching body parts sneezing, coughing, using toilet room, etc
Noted two-door reach-in refrigerator with improper temperature of 49 degrees
All refrigeration units must be at or below 41 degrees
Immediately repair or replace unit as to be properly operating
All potentially hazardous items must be removed from unit and placed at another properly working unit.
