Employees had no knowledge of sanitizing solution requirements for dishwasher and correct concentration of bleach using test strips
Minimum concentration required for dishwasher is 50 ppm
Minimum concentration of sanitizing buckets is 100 ppm of bleach
Observed quart containers of sour cream, cheese and condiments stored incorrectly inside pan full of ice
The pan must be deep enough to hold ice that covers the entire container to match inside food level
This method keeps all food at or below 41 degrees
Thirty heads of decaying cabbage were voluntarily thrown in trash
Do not store at room temperature
Sanitizing buckets with cotton terry cloth towels not available for wiping tables and food preparation surfaces
Mix one dedicated bucket with bleach solution for dining area and one for kitchen
A 100 ppm of bleach solution is required

Contact repair person to troubleshoot this refrigeration unit to ensure 41 degrees or below can be maintained at all times
Provide one working (approved) thermometer for this unit
Also heavy condensation dripping on raw vegetables
Repair person must address this issue as well
