Discussed with operator the flow of food in the kitchen. The pizza prep cooler should be replaced since it has been repaired multiple times in the past and it is still failing. For the interim, please ensure that the food in the pizza prep top is always on ice and that all food measures 41 degrees or less. Repair the leak at the 3 compartment sink (this has been in poor repair for a while and needs to be addressed).

    Observation: The person in charge failed to identify Critical Control Points (CCP) in the operation from purchasing through sale or service. The PIC is not aware of the relationship between controlling CCPs and the transmission of foodborne illness. Operator had started filling the pizza prep unit without first filling the top holding area with ice, knowing that the unit was not working. Operator sent out for ice.
    Correction: Ensure the designated person in charge (PIC) is knowledgeable about foodborne disease prevention, Hazardous Analysis Critical Control Point principles and Regulation requirements. The PIC should be prepared to recognize conditions that may contribute to foodborne illness.     Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

Substantial compliance with the Virginia Food Code. All items from the plan review have been addressed except for the back door that still is in need of a small strip of weather stripping.
